About the authors

Jess Murphy, the chef and owner at the beloved Kai Restaurant in Galway (kai is the Maori word for food), is well known and highly regarded in the food industry for her work with refugees and her advocacy for women in food.

Eoin Cluskey, a carpenter turned baker, is the founder and owner of Bread 41, an organic sourdough bakery on Pearse Street in Dublin with a cult following that puts community at the heart of its work.
